Beyond the Grape: A Survey of Maine Wine

Explore the breadth of wines that Maine vintners are producing--It’s not limited to grapes! Enjoy a guided tasting of 5-6 Maine wines made from a variety of fruits (including, but not limited to grapes). Experience the creativity and innovation of Maine vintners while learning about the environmental and cultural factors that contribute to our state’s diverse wine industry.
Attendees will also learn about the techniques winemakers use to influence the characteristics of the wine and achieve their desired flavor profile, even when using non-traditional ingredients.
Instructor Lynda Gaines is a WSET Level 3 Certified Wine Enthusiast.
Maine Bagel Lab

There’s nothing like a great, chewy bagel for starting your day off right–except for a great, chewy bagel that you made yourself with delicious local ingredients! In this hands-on workshop, attendees will learn how to make bagels from beginning to end–measuring and mixing the dough, portioning and shaping bagels, and finally boiling and baking. Craft your perfect bagel using Maine Grains flour and mix-ins/toppings from local producers–even mix your own flavored cream cheese to top it off!
This is an interactive class and the course fee includes a beverage of choice in the Tasting Room immediately following class. All ingredients, materials, equipment and recipes will be provided.
Instructor Jeff Mao of Knead and Nosh is an avid home cook, baker and cookbook author who teaches cooking and baking classes with a special focus on foods that incorporate doughs in one form or another.
Maine Malts & Malty Beers

Malted grains provide the backbone for beer, influencing its color, flavor, aroma and mouthfeel. In this class participants will learn about how malt is made here in Maine and around the world, and about the techniques that maltsters use to make different malt products from the same base grain.
You’ll have a chance to taste samples of malt and learn how different malts can be used together to produce the characteristic flavors of classic beer styles. The class will also include samples of several malt-forward Maine craft beers. If you’re interested in a break from hop-heavy beers, this class will provide a refreshing change of pace into the many varieties of malty beer.
Instructor Will Laliberte is a certified Cicerone®, home brewer and lab manager for Bath Ale Works.
Red Wines of Maine

Explore the variety of red wines that Maine vintners are producing! Attendees will enjoy a guided tasting of 5 to 6 Maine red wines, comparing and contrasting not only the wines themselves but the grape varietals used. Attendees will also learn about the techniques winemakers use to influence the characteristics of the wine–like “dry,” “sweet,” or “fruity.”
This is an interactive class and the course fee includes a full pour of one of our top rated wines from the class in the Tasting Room immediately following the course.

Acadian Arts Asian Fusion Cooking Retreat (June)

Your instructor, Chris Toy is the author of 6 popular cookbooks, a private chef, and has taught Asian-fusion cooking for several Maine community education programs. Cooking students will learn how to prepare a variety of recipes from Asia, Europe, and the Americas incorporating traditional and local ingredients. Each meal will actively engage cooks with the tools, techniques, and stories behind the dishes being created. Step back to a time when President Franklin Roosevelt, Eleanor, and their family escaped to their “beautiful little island” in the Canadian maritimes, Campobello Island. We will be exclusive guests of the international park, staying in historic Victorian cottages. Workshop participants will be immersed in the same coastal scenery enjoyed by the summer residents at the turn of the 20th century. All meals are included in the workshop fee as well as specially planned optional evening activities designed to extend your learning from the day’s workshops. Painting is an exciting medium; it flows and moves and does beautiful things. If you have never painted in watercolors, we will start at the beginning. If you have painted before, you will pick up some new tips and tricks as well. We all learn together! Cooking with BoomerTech Adventures
with Ed Brazee
In this course, BoomerTech Adventures guides Chris, Jill, and Ed share their love of cooking and enjoyment for lots of different types of foods. You will learn how to prepare several tasty stir fries using traditional Chinese flavorings, make fresh pasta, turn leftover sweet potato into gnocchi, stir up a great fried rice, and give ramen soup a delicious upgrade.
In addition, discover an easy way to make your own pita pockets, flatbreads, and tortillas. Plus, you will see a way to combine the benefits of cooking on cast iron with your love of grilling. We haven’t forgotten dessert! Who can resist a delectable chocolate brownie torte or apple pie?
CLC Adult Education is pleased to partner with BoomerTech Adventures to offer this fully asynchronous online course students can complete on their own time and at their own speed. The course is a PDF booklet with information about the class, instructions for using the class, and the content of the class (videos and articles).
The three instructors provide personalized support for the class via email and / or online chat. And the course is available to students for the full fall semester.
Tech requirements for each course are a strong internet connection (or access to one) and a computer, or tablet, or smartphone to access videos and articles.
